Rhubarb and Cherry Pie

It’s season for rhubarb and this pie is a lovely cobbler pie with rhubarb and sweet cherry.

Cobbler pie is a great choice when you have friends over for some coffee or as a dessert after dinner. In my family we love these kind of pies and I love making them. And often we eat it with vanilla sauce or with ice cream.

Rhubarb and Cherry Pie

This time the plan was to make one rhubarb pie cause we have a lot of rhubarb in our garden, so I wanted to make a rhubarb cobbler pie for dessert after our dinner last weekend. But in the last minute I saw the cherries in the freezer, so thought I could use them in the pie. And I’m glad I did 🙂

Me and my husband doesn’t mind to the sour taste, but my daughter sometimes think it get a little too sour and take a lot of vanilla sauce on it.

How To Make Rhubarb and Cherry Pie

  • 500 grams rhubarb
  • 1/2 tablespoon potato flour
  • 1 teaspoon cinnamon
  • 4 tablespoons sugar

Cobbler dough

  • 3/4 cup oats
  • 3/4 cup flour
  • 4 tablespoons sugar
  • 125 grams butter

  1. Preheat the oven to 450 Fahrenheit.
  2. Cut rhubarb into slices. Mix rhubarb, potato flour, cinnamon and sugar in an ovenproof dish.
  3. Mix oats, flour and sugar in a bowl. Add the butter, cut into pieces and work together to make a crumbly dough. Use your hands or a fork when you do this.
  4. Spread the dough over the rhubarb. Bake in middle of oven about 20 minutes. Serve with custard.

Recipe Notes

Let the pie cool and rest for 5 minutes before you serve it. Serve the pie with a great vanilla sauce or with vanilla ice cream.
